These hinds are all red deer. Most of the stags on the farm are a breed of elk (the name of which I cannot remember).

each paddock has a "small" (like 30) herd of hinds with one stag.

These deer are raised mainly to harvest their antlers! The antlers are cut off when they are still velvet, freeze dried and packaged, and sold to Korea(mostly)as a health suppliment.
